Three quick and simple breakfast bowls

Breakfast is the most important meal of the day but is the one that most of us have little time for. You can make these vegan recipes the night before (or at least prepare all your ingredients) and put it in the fridge, so in the morning you’ll be ready.

Just grab yourself a spoon and enjoy!

Green smoothie

Ingredients:

  • 1 cup spinachs
  • 1 mandarin
  • 1 small piece cucumber
  • 1 small piece zucchini
  • 1 banana
  • 1+1/2 cup water
  • 1 tsp ginger
  • 1 tsp spirulina
  • 1 tbsp chia seeds
  1. Mix all ingredients in a blender until its done! Add more water if needed. Add some oats, berries, chia seeds on top and you can also decorate it with kiwi slices.

 

Ingredientes:

  • 1 taza de espinacas
  • 1 mandarina
  • 1 + 1/2 taza de agua
  • 1 plátano
  • 1 cucharadita de jengibre
  • 1 cucharadita de spirulina
  • 1 cucharada de semillas de chía
  • Un trozo de calabacín
  • Un trozo de pepino
  1. Bate todos los ingredientes en una batidora potente hasta que esté. Añade más agua si hace falta.

Vegan blueberry yogurt parfait

Blueberries are absolutely one of my favorite foods to eat. I try to eat them every day and just love them in my morning smoothies.

Blueberries are rich in fiber, in vitamin C, vitamin K, and manganese. Can help protect against urinary track infections, improve heart health, can reduce cancer risk.. so today I want to share with you this vegan blueberry yogurt parfait that is absolutely delicious. I used soya yogurt and then I blended with blueberries, but you can use any kind of vegan yogurt you prefer.

Ingredients:

  • 1 soya yogurt
  • 4 tbsp rolled oats
  • 7 blueberries (aprox.)

Spoon oats into a clear glass. Blend soya yogurt with blueberries. Pour the mixture into the glass and finally sprinkle some oats and decorate with raspberries and more blueberries. Refrigerate or serve immediately.

Ingredientes:

  • 1 iogur de soja
  • 4 cucharadas de avena
  • 7 arándanos

Bate los arándanos con el iogurt. Pon la avena en un vaso de cristal y luego añade el iogurt. Finalmente añade más berries y avena para decorar.

Blueberry smoothie

Last month I shared with you a berries smoothie recipe made with frozen bananas and some berries. Trying something different this time I added soya yogurt and the result was excellent. I decorated with pumpkin seeds (I love them) and chia/oat.

There are a lot of ingredients you can use to make a good smoothie. You can add whatever you want and the result always will be perfect. This time I’m not using frozen bananas, just wanted a “more liquid” smoothie.

Ingredients

  • 2 bananas
  • 1/2 cup blueberries
  • 1 soya yogurt

Blend all ingredients together until well combined.

Easy vegan brownie

A few weeks ago I showed you the recipe of vegan oreo brownie and now I want to start september sharing with you this simple vegan brownie recipe.

For the recipe (below) I use a 22cm cake pan and I always cover the base with baking paper. This brownie is a little thin, But don’t worry because it’s so yummy!

Hace unas semanas colgué la receta de un brownie de oreo vegan, el brownie de hoy es más sencillo pues no requiere oreos. Es un simple brownie con nueces.

Ingredientes

  • 70 g harina
  • 150 g chocolate
  • 25ml aceite
  • 100 g azúcar
  • 1 cucharadita de levadura en polvo
  • pellizco de sal
  • 50 g nueces

Usa un molde de unos 22 cm de diámetro y cubre la base con papel de horno, así será más fácil de sacar una vez horneado.

Precalienta el horno a 180ºC.

Derrite el chocolate en el microondas o al baño maría.

Mezcla el aceite y el azúcar en un bol. En otro bol mezcla harina con la levadura y la sal y junta el contenido de los dos boles. Finalmente añade el chocolate y las nueces al gusto (yo usé 50 g). Esparce la masa en el molde (verás que queda muy fina) y hornea de 10 a 15 min.
