Chocolate cake

Ingredients:

  • 1 cup flour
  • 1/2 cup cocoa powder
  • 1 tbsp chia seeds + 3 tbsp water
  • 2 tsp baking powder
  • 1/4 tsp salt
  • 1/3 cup cane sugar
  • 1 tbsp maple syrup
  • 1/4 cup vegetable oil
  • 1/3 cup water or plant based milk
  • 1/4 cup melted chocolate
  • some chocolate chips (optional)
  1. Preheat oven to 175ºC or 350ºF.
  2. Grease an 20 cm cake pan and line the bottom with parchment paper.
  3. In a bowl mix flour, cocoa, baking powder and salt.
  4. In another bowl mix chia seeds+water, sugar, maple syrup, oil and water.
  5. Combine both bowls.
  6. Add melted chocolate and chocolate chips and stir.
  7. Pour the batter in the prepared pan and bake for 12 to 15 minutes.

Ingredientes:

  • 1 taza de harina
  • 1/2 taza de cacao
  • 1 cucharada de chia y 3 de agua
  • 2 cucharaditas de polvo de hornear (levadura quimica)
  • 1/4 pizca de sal
  • 1/3 taza de azúcar de caña
  • 1 cucharada de sirope de arce
  • 1/4 taza de aceite vegetal suave
  • 1/3 taza de agua o leche vegetal
  • 1/4 taza de chocolate derretido
  • algunas pepitas de chocolate
  1. Precalienta el horno a 175ºC o a 350ºF.
  2. Engrasa un molde de 20 cm con un poco de aceite y harina y cubre con papel de hornear.
  3. En un bol añade harina, sal, polvo de hornear, cacao.
  4. En otro bol añade la chia y el agua, el azúcar, el sirope de arce y leche vegetal o agua.
  5. Combina los dos bols y añade el chocolate derretido y las pepitas y mezcla.
  6. Hornea de 12 a 15 minutos.

Sweet soya sauce with vegan chicken

Ingredients (2 servings):

  • 1/4 cup soya sauce
  • 1/2 cup of water
  • 2-3 tbsp maple syrup
  • 1 tbsp sugar
  • 1 cup vegan “chicken”
  • 1 tbsp cornstarch + 1 tbsp water
  1. Heat oil in a pan and cook the vegan chicken until golden.
  2. Mix water, sugar, maple syrup and soya sauce in a bowl and add it to the pan.
  3. Add cornstarch and water mixture and whisk frequently for 10-12 minutes until thickened and reduced.
  4. Serve over rice.

Ingredientes (2 personas):

  • 1/4 taza de salsa de soja
  • 1/2 taza de agua
  • 2-3 cucharadas de sirope de arce
  • 1 cucharada de azúcar
  • 1 taza de “pollo” vegano
  • 1  cucharada de maizena con una cucharada de agua
  1. Calienta una sárten con aceite y cocina el “pollo” hasta que dore.
  2. Mezcla agua, sirope, azúcar y salsa de soja en un bol y añadelo a la sartén.
  3. Añade la maizena con el agua y cocina unos 10 minutos hasta que haya reducido y espesado.

Mushroom-red wine sauce

Ingredients (serves 1-2; add more mushrooms, stock and wine if you want)

  • 100 g sliced mushrooms (about 2 cups)
  • 1 carrot, diced
  • 1 onion, chopped
  • 1/2 cup red wine (vegan)
  • 1 cup vegetable stock (or hot water + vegan boullon cube)
  • 1 garlic clove, minced
  • salt and pepper to taste
  • 2 tbsp tomato sauce
  1. Heat oil in a saucepan, cook onion and garlic over low heat, add carrots and stir until softened. Finally add the mushrooms and tomato sauce and stir and let it cook for a few minutes until mushrooms are cooked.
  2. Add the red wine and bring to a simmer for a few minutes. Then add vegetable stock, a pinch of salt and pepper to taste and cook for about 20 minutes at medium high heat or until sauce thickens. Add more vegetable stock if needed.
  3. Perfect with rice or pasta!
